Sunshine Coast’s Hottest Venue Sully’s Rooftop Now Open

18 May 2026: The Sunshine Coast’s newest rooftop dining destination, Sully’s Rooftop, has officially opened its doors last Friday, bringing modern Australian dining, sunset cocktails and panoramic coastal views to the heart of Mooloolaba.

Located atop the newly opened Avani Mooloolaba Beach Hotel, Sully’s Rooftop spans level 12 of the landmark beachfront hotel, offering expansive 180-degree views stretching across Mooloolaba Beach, Point Cartwright and the coastline beyond.

Opening from lunch through to late evening, Sully’s blends rooftop dining, cocktails and coastal energy into a venue designed for everything from long lunches and poolside grazing to sunset drinks and celebratory dinners.

Led by Executive Chef Marky Godbeer, formerly of Brisbane’s The Calile Hotel, Sully’s has been designed as a relaxed yet elevated dining experience that captures the energy, flavour and rhythm of the Sunshine Coast.

The menu at Sully’s celebrates modern Australian dining through a playful, produce-led approach shaped by the Sunshine Coast’s rich network of local growers, trawlers and artisan producers.

Designed for sharing, the opening menu moves from freshly shucked oysters with fermented chilli mignonette and lime-cured Mooloolaba yellowfin tuna, through to charcoal-kissed king prawns with coconut dressing, woodfired oyster cut lamb shoulder and grass-fed rib eye with black garlic butter.

Smaller plates such as pig’s head and aged comté donuts, grilled olive mortadella with whipped ricotta, and smoked wagyu beef snag rolls sit alongside artisanal flatbreads topped with local prawns, whipped ricotta or truffle honey butter – designed for grazing over cocktails as the sun sets over the coastline.

Throughout the menu, Godbeer leans into familiar Australian flavours and nostalgic references, elevated through technique and premium local ingredients without losing the relaxed spirit of coastal dining.

Dishes including the smoked wagyu beef snag, a playful nod to the classic Bunnings sausage sizzle, and the pork and prawn schnitty with fennel slaw and nduja lemon butter reflect the venue’s balance of comfort, humour and refinement.

Desserts continue the theme, with the “Cherry Ripe” reimagined as a dark chocolate mousse with coconut crumb and cherry sorbet, alongside a modern take on the lamington with raspberry and pistachio.

Designed by award-winning interior design studio Luchetti Krelle, the venue blends natural textures, warm tones and coastal-inspired finishes with an open-air rooftop setting centred around the Pacific Ocean outlook.

The venue transitions from relaxed daytime dining into vibrant evenings, with cocktails, music and a menu built around grazing, sharing and connection.

Godbeer said Sully’s was created to feel social, energetic and deeply connected to the destination.

“We wanted Sully’s to feel like the kind of place people come for one drink and end up staying all afternoon,” Godbeer said.

“The menu has been built around that idea of sharing and discovery. You might start with oysters and a flatbread, move into seafood and grilled proteins for the table, then finish with something nostalgic like our lamington or Cherry Ripe dessert.

“It’s relaxed food, but there’s still a lot of technique and detail behind it.”

Godbeer said the goal was to create a venue that feels elevated but never intimidating.

“I like dishes that feel approachable but still spark curiosity,” he said.

“There’s a cheekiness to the menu. Whether it’s the smoked wagyu snag, our fried chicken with smoked jalapeño or the seasonal sgroppino prepared tableside, we wanted the experience to feel fun, social and genuinely Australian rather than overly polished or pretentious.”

Sully’s Rooftop forms part of the newly launched Avani Mooloolaba Beach Hotel, the first full-service internationally branded hotel to open on the Sunshine Coast in more than four decades.
